Sweet and Sour Slow Cooker Pork

You'll love this old classic, made even easier in the slow cooker! With the distinctive flavours of brown sugar, vinegar and chilli, this is the perfect dish to cure your Asian craving.

Ingredients

  • 1 tbsp olive oil
  • 8 pork scotch fillet steaks
  • 2 red onions, cut into wedges
  • 1/3 cup soy sauce
  • 1/3 cup tomato sauce
  • 2 tbsp firmly packed brown sugar
  • 2 tbsp white vinegar
  • 1/4 tsp dried chilli flakes
  • 2 garlic cloves, crushed
  • 440g can pineapple pieces in natural juice, juice reserved
  • 1 green capsicum, roughly chopped
  • 1 red capsicum, roughly chopped
  • 2 tbsp cornflour
  • 2 green onions, thinly sliced diagonally
  • Steamed jasmine rice, to serve

Instructions

  1. Heat oil in a large frying pan over high heat. Brown pork, in batches, for 1 to 2 minutes on each side or until browned.
  2. Meanwhile, place red onion, sauces, sugar, vinegar, chilli, garlic, pineapple, reserved pineapple juice, capsicums and cornflour in a 4.5 litre-capacity slow cooker. Toss to combine. Add pork to cooker. Cook, covered, on LOW for 4 hours.
  3. Top with green onion and serve with rice.
